Nourish Bowl - eat the rainbow!

You can’t go wrong eating a colouful bowl of food like this! It includes veggies for antioxidants and fibre, avocado for good fats, feta for calcium, chicken for protein, brown rice for fibre and a gorgeous dollop of golden beetroot sauerkraut. Yum!

Ingredients

  • 2/3 cup of brown rice, cooked & cooled

  • a hanful each of shredded coleslaw mix & mixed greens

  • 25g of feta, cubed

  • 100g cold cookec chicken

  • A few strips of capsicum

  • 1 tablespoon of golden beetroot & turmeric kraut

  • A drizzle of dressing of your choice, I used Green Goddess

Method

Choose a medium sized bowl. Start with the rice in the centre of the plate. Then add the other ingredients in a circle around the rice. Top the centre with the golden beetroot kraut. Drizzle with dressing. Enjoy!
